I am really lucky.
I was blessed with a great mom who loves me and loved being my mother.
Then, I got married and also got a new mom – my mother-in-law!
She lives a few driveways away from us and I genuinely love seeing and spending time with her.
I especially enjoy when we get together as a family to celebrate holidays.
I really like how happy it makes her to be surrounded by her sons, daughters-in-law, and grandchildren.
In the Spirit of Mother's Day, I'm Surprising my Mother-In-Law with Brunch!
And, since my own mom is 4,000 miles away in Alaska, I thought I'd do up a little something special for my mother-in-law to show her how much she means to me.
So, in the spirit of Mother's Day, I'm surprising my mother-in-law with brunch!
Shhh… don't tell her though! It's a secret!
In the Spirit of Mother's Day, I'm Surprising my Mother-In-Law with Brunch from Tyson Foods, Thomas’, and Walmart
Super Simple and Basic Pound Cake Petit Fours
Ingredients:
- 16 oz. Sara Lee® Pound Cake All Butter
- 2 Cups confectioner’s sugar (plus more, as needed)
- 4 Tablespoons of warm water
- Sprinkles
Directions:
Step One:
Trim the top and sides (the darker brown parts) off a frozen 16 oz. Sara Lee Pound Cake All Butter so it becomes a clean-lined rectangular block of cake.
Step Two:
Use a knife to slice the pound cake into even squares – 1″x1″ works best.
I used a bread knife but a serrated one would also work (just use overly exaggerated sawing motions to keep your cuts smooth).
Step Three:
Set each pound cake square on top of a cake rack that is placed over a baking pan.
Leave about an inch or so space in between the squares.
Step Four:
Mix up the royal icing by sifting the confectioners’ sugar into a medium bowl.
Add the warm water and whisk to the desired consistency.
You want the mixture to be thin enough to pour smoothly but thick enough to coat each cake square completely.
Add two drops of the gel food coloring.
Use a spoon to drizzle the royal icing over each cake square.
Use more icing as needed to “patch” any uncovered areas.
Step Five:
Gently shake your sprinkles on top of the still wet icing.
Step Six:
Chill petit fours in the freezer until the icing hardens (roughly 15 minutes) or leave on the counter to dry for an hour.
Step Seven:
Serve.
Petit fours will keep for up to two days if stored in an airtight container.
