Pesto Pasta featuring Skinner Pasta
I freaking ADORE pasta and all its variations.
Not only is it delicious and filling but it's the perfect meal to share with your friends.
You can make it as fancy or as simple as y'all like and it's still super affordable.
Pasta And Friendship
I wanted to make something special for the people in my life.
I decided that since Skinner is Texas's #1 pasta and basically OWNS National Friendship Day, that they would be the ideal foundation for a favorite dish of mine to share.
And you lucky dogs get to enjoy a little of the friendship, too!
Because today, I'm sharing my recipe for a simple Pesto Pasta featuring Skinner® pasta.
Now go and whip it up so that you can share some with your bestie!
Making Pasta For Friends
Just like pasta – every friendship is unique and this recipe is perfect for tweaking and making it your own:
Add chicken or zucchini.
Reduce the amount of pesto or swap out basil pesto for spinach pesto. Instead of sautéed tomatoes, roast yours under the broiler.
Whatever you and your friends love – DO IT. This is a recipe meant to reflect your tastes and favorites.
I love to alter this for whichever friend I'm making it for – whether they be vegetarian or meat lovers, tomato fans or squash fanatics.
I can adapt this to their preference with ease.
I love to use for this recipe because of its great taste, ease of cooking, and affordability – making it perfect for a get-together with my friends.
Pesto Pasta
I tasty meatless meal for busy weeknights.
Ingredients
- 1 package Skinner pasta
- 1 TBSP olive oil
- 1 pint tomatoes
- 1 cup basil pesto
- 1 pinch kosher salt
- 1 pinch freshly ground black pepper
Instructions

Boil water and cook pasta to al dente per package instructions. Meanwhile, cut tomatoes into bite-sized pieces.

Heat a skillet to medium high heat and add olive oil.

Drain cooked pasta and reserve 2/3 cup of pasta water.

Add pesto and as much pasta water as you desire (I start with half and add more if necessary) to the skillet with the tomatoes. Stir and cook for 1-2 minutes.

Turn off heat and add pasta to the skillet. Stir the pasta into the sauce and allow the residual heat to gently cook it all together (roughly 1 minute). Enjoy!
