You probably have tons of cookie swap parties, bake sales, parties, and entertaining that you want to make cookies for, don't you?

Well, I'm going to help you out today.

Chunky Christmas Cookies Using a Brownie Box Mix

I am going to share with you my recipe for super yummy, super crowd-pleasing, super simple, and super easy chunky Christmas cookies using a brownie box mix.

Yep, this cookie is made with only a handful of ingredients and one of them is brownie box mix.

So thick and chocolatey and gooey.

This is really my go-to recipe when I'm pressed for time (or, let's be honest, too lazy to do any “real” baking) but want a cookie that looks and tastes like I slaved over a hot oven for hours.

Chunky Christmas Cookies using a Brownie Box Mix

Chunky, chocolatey Christmas cookie that only LOOKS like you spend hours baking them.

Course Dessert
Cuisine American
Servings 2 dozen

Ingredients

  • 1 bag brownie mix dry ingredients only
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1/4 cup all purpose flour
  • 1/4 cup white chocolate chunks or chips
  • 1/2 cup chocolate chips
  • sprinkles if desired

Instructions

  1. Preheat oven to 375 degrees. While oven is preheating, mix all the dry ingredients in a mixer and then mix in the wet ingredients. Mix in the chocolate chunks/chips at the very end.

  2. Use a small cookie scoop and stack two scoops of dough, one on top of the other, on to an ungreased baking sheet. Keep cookie mounds approximately 2″ apart.

  3. Bake cookies for 9-10 minutes.

  4. Allow to cool on the baking sheet for 2-3 minutes then transfer to a cooling rack. If desired, add sprinkles while cookies are still hot.

One Of The Best Cookie Making Tips You Will Ever Receive: 

In case you missed it in the recipe instructions above, the secret to making chunky, fluffy cookies is all in the scoop!

Instead of scooping out ONE scoop and moving on, scoop out a second mound of dough and place it ON TOP of the first.

It should look like two scoops of ice cream.

This will help the cookie stay chunky and pretty!

Since you're working with extra dough, be sure to leave at least 2″ around each cookie dough mound.

    Listen, cookie scoops are life-giving, and these look delicious. Now I must do a double scoop on all of the cookies. So many to make, and so little time. Only 28 days until Christmas!
